Quinoa Berry Breakfast Bowl

Start the day (and the New Year!) out right with this super easy to make Quinoa Berry Breakfast Bowl. Most mornings my go-to is a protein smoothie. This warm bowl of goodness is a nice alternative, in the winter months especially. This breakfast only takes a few minutes to prepare if you keep prepared quinoa on hand. Replace the berries with any warmed fruit, exchange the almonds with your favorite nuts… this just happens to be my favorite combination.

Many of us, and I dare say most of us, are happy to say goodbye to 2020 and have hope for 2021. The obvious is that the vaccine will return our daily lives back to normal before the close of this new year. Being an optimist I hope the new normal will be better than the old. A year + of contemplation is good for the soul of each of us, our country and our world. I pray that new found appreciation for things formerly taken for granted, such as our health and time with family are only a fraction of the takeaways from the Coronavirus experience.

New Years provides us a nice time to reset our personal goals. Two of my fitness goals for 2021 are to eat a more balanced, low carbohydrate diet and to move my body more. To that end my husband and I gave each other a treadmill for Christmas. My goal is to spend at least 45 minutes a day on it. I find it easy to do this while watching TV. Reality shows like Shark Tank or The Voice make the time go by quickly.

For my goal of eating less carbs it’s really about setting that commitment to myself and having healthy, yet satisfying foods readily available. When preparing my grocery list I make sure I have low carb snack items that are easy to grab such as celery and peanut butter, yogurt, sunflower seed/coconut shred trail mix or Energy Snack Bites. It also helps to plan out my menu for 5 days prior to shopping. (I usually have enough leftovers for one day a week and we try to support local restaurants with takeout once a week).

Ingredients

  • 1 1/2 cups pre-cooked quinoa

  • 1/2 Tbs. coconut oil

  • dash salt

  • 2 Tbs. slivered almonds

  • 1 cup frozen berries (or fresh)

  • 2 Tbs. Maple Syrup or (I use) Lakanto Monk Fruit Maple Syrup

  • 1 dollop yogurt (of your preference)

Directions for Quinoa Berry Breakfast Bowl

  • Warm coconut oil in a skillet on medium high heat. Use cast iron if possible.
  • Add quinoa to skillet. spread out the quinoa and let it fry until the quinoa begins to make sounds of browning… approximately 2 minutes.
  • Add slivered almonds and stir-fry until almonds are lightly browned.
  • Add a dash of salt.
  • While the quinoa is frying place frozen berries into a small glass bowl and microwave for 1 minute. Alternatively warm in a small pan on the stove.
  • Assemble warm Quinoa Berry Breakfast Bowl
  • Place quinoa and slivered almond mixture into a bowl.
  • pour warmed berries and their liquid onto the quinoa almond mixture.
  • Drizzle maple syrup over the bowl.
  • Top with a dollop of yogurt.

Notes

  • For a decadent snack I add Lily’s stevia sweetened chocolate chips to this recipe just before adding the dollop of yogurt.
