This tangy, slightly spicy, slightly sweet cucumber salad can be served as a side dish or as a condiment. It would make a delicious accompaniment to hamburgers or sausage (veggie of course). Balsamic vinegar and plenty of black pepper give a new spin to the traditional summer salad recipe.
On my daily stroll through my vegetable garden this morning I noticed a cucumber peeking out of a smallish cucumber plant. I didn’t think the plant nearly ready to produce, upon looking closer I found not one but three cucumbers ready for harvest. I had some red onions in my pantry, that I had harvested in the spring, needing to be used and begging to be paired with the cucumbers.

Not being a huge fan of the traditional cucumber/red onion salad recipe that are found at many summer gatherings, I played around with vinegars and came up with a recipe that hit all the right notes for my taste buds. hope you enjoy the recipe as much as I do. What would use to substitute if you didn’t have maple syrup?
I used honey. You could also use agave nectar, sweetener, sugar, monk fruit, etc.
