Chocolate Chip Power Bars

When I’m having a rough day I find myself making warm comfort food such as soup, stew, pasta and beans. My sweet tooth sometimes gets my attention when I’m feeling down too. This Chocolate Chip Power Bar recipe satisfies that sweet craving and has so much protein that I can even justify eating one for breakfast.

Speaking of feeling down… This past week we unexpectedly lost our dog Lacey, a Corgi-Chihuahua mix. Lacey was originally adopted for my late in-laws, Rick and Barbara. Unfortunately Lacey and Rick didn’t get on well because Lacey wanted exclusive attention with Barbara. Brian and I ended up taking her. Lacey immediately adopted me as her “person” and from then on we were inseparable.

Last week we took Lacey to the vet because she developed a limp. Sadly, we learned that she had end-stage bone cancer. Within a few days a second leg buckled under her and it became apparent that we had to relieve her of the pain she must have been experiencing. Anyone who has lost a sick pet knows the agony of making this choice. Our home is now very quiet without the pitter-patter of her feet following me everywhere I go. My heart aches beyond anything I can write. When I am sad I often turn to cooking to occupy my thoughts and time, not always because I’m hungry but because it’s creative and I enjoy knowing there’s homemade food in our home.

Chocolate Chip Power Bars

This Chocolate Chip Power Bar recipe is easy to make, the bars are great on-the-go and perfect post workout snack. You can use applesauce in place of the olive oil if you want to cut calories and fat. Experiment by adding other ingredients like coconut, almonds, or dried fruits.

Ingredients

  • 5 cups rolled oats – gluten-free

  • 1 cup chopped walnuts

  • 1 package Lily’s Semi-sweet Chocolate Baking Chips (stevia sweetened, vegan)

  • 1/2 cup maple syrup or honey

  • 1/2 cup coconut oil (just barely melted) or vegan butter

  • 1/2 cup olive oil (or apple sauce for a lower fat and calorie recipe)

  • 1 Tbs. vanilla extract

  • 6 eggs or egg substitute such as flax eggs

Directions

  • Line a 9×13 baking dish or pan with parchment paper. Preheat oven to 350 degrees
  • Mix all dry ingredients together in a large bowl.
  • Mix all wet ingredients, except the eggs, together in a small bowl.
  • Combine wet and dry ingredients in large bowl, mix well.
  • Whip eggs in a separate bowl. Fold eggs into the rest of the ingredients.
  • Press oat mixture firmly into the lined baking dish/pan.
  • Bake on the middle oven shelf for 25 minutes. Cool completely in refrigerator before slicing into squares.

Notes

  • If you want to brown the tops of the bars move the pan/dish to the top shelf and broil for the last 3-5 minutes in the oven.
