The Fuji apple tree in our backyard had its first harvest of about 15 apples. I say about 15 because Dora, our golden retriever, ate the apples that were within her jumping height. We ended up with just enough to make one Apple Nut Crumble.
This recipe was adapted from a recipe shared with me by Allison Post. I thought this would be a good opportunity to talk a little about Allison. I have come to know her through a online group for graduates and students of The Academy of Integrative Medicine, which we both attended. Allison is a health coach, healer and somatic educator who has training in many western and eastern disciplines including hypnotherapy, acupuncture, ayurveda, functional medicine, craniosacral therapy and more. Allison is also a published author. Her practice is located in Marin County California and she has an online Gut Wellness Course. I have read two of her books, The Gut Wellness Guide and Unwinding the Belly. I wholeheartedly recommend them to anyone dealing with hard-to-pin-down causes of chronic pain, fatigue, gas, bloating, and other common disorders associated with the gut, as well as those wanting to improve their overall health.
I have made a few changes to this recipe. Her original recipe had raspberries so you could substitute 1 cup of the apples for raspberries. I chose to use only apples because the apples from my tree were very sweet. I also added salt and lemon to balance the sugar content of the sweet apples.
This is the best apple crumble recipe I have ever made. It is crunchy, the perfect amount of sweet and is amazing served warm with a scoop of vanilla ice cream. (I recommend an ice cream by So Delicious that is sugar-free, dairy-free and made from coconut cream.)
